• 1 lb Italian Sausage (optional: 1/2 lb of hot italian sausage & 1/2 lb mild sausage)
  • 2 lbs lean ground beef
  • 1 minced garlic clove
  • 2-16 oz OR 4-8 oz cans of Italian tomatoes
  • 4-6oz OR 2-12 oz cans of tomato paste
  • 1 extra can of tomato past for back up?
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon chopped fresh basil or dried basil
  • 1 teaspoon oregano leaves (spice) or fresh
  • 4 1/2 tsp salt (depending amount in tomato paste)
  • 1 1/2 tsp sugar (adlib)
  • 1-16 oz pkg lasagna noodles (don't forget olive oil)
  • 3 eggs
  • 1-16 oz ricotta cheese
  • 1-16 oz cottage cheese
  • 3-16 oz pkgs of mozzarella cheese; use last 16 oz one for top of lasagna
  • sour cream

Make 3-4 hours before serving.

Make sure you have 1-big ass skillet, 1-regular skillet, and 2-13″x9″ casserole pans!

1. Cut Italian sausage into 1/4 inch slices.  In a regular skillet, cook sausage until browned.  (about 10-15 minutes)

2. In your big ass skillet, cook ground beef and garlic, stirring frequently until meat is browned.

3. Add sausage to ground beef in big ass skillet.

4. Add tomatoes & tomato paste

5. Add parsley, basil, oregano, salt, & sugar

6. Cook over high heat.  Heat to boil..get ready to simmer.

7. Meanwhile, start cooking lasagna noodles with 1 teaspoon of olive oil.  (Cook according to instructions but under the time.)

8. Reduce to simmer for 25 minutes in big ass skillet.  Stir frequently until sauce is slightly thickened.

9. In medium/large bowl, beat eggs with fork.  Stir in Ricotta cheese and cottage cheese.

10. Preheat oven to 350 degrees.  If oven cooks too hot, try 325.

11. Grease or spray Pam on 2-13″x9″ pans.

Layers

12. Into each pan, spoon 1 cup of meat tomato mixture.  Arrange a layer of noodles over sauce.  Spoon a layer of cheese.  Top with sliced Mozzarella cheese.  Repeat until noodles are used.  (usually 2 or 3 layers??)

Do not put final cheese on top yet!

13. Bake for 1 hour.  However, 10-15 minutes before, pull out of oven.

14.  Top with LAST layer of Mozzarella cheese!  Put it back in oven for the rest of the time. (10-15 minutes)

15. Is it hot & bubbly?  Lightly browned?  Is cheese nicely melted?  (BIG SMILES?  SUCCESS!!!)

16. Pull out of oven.  Let stand for 10-15 minutes.  Top with sour cream.
