• 1-2 large cans of Starkist Fancy Albacore Tuna in water OR 2 cups of cooked chicken or turkey
  • 1 bag (12-16oz) wide egg noodles
  • 1 lb cheese (cheddar, jack, mozzarella, or mixed). ADLIB and HAVE FUN WITH IT!
  • 2-8 oz or 1-16 oz sour cream-regular or light (1/2 of it is used for topping later)
  • 8 oz cottage cheese-regular or light
  • 2 eggs
  • 1/2 bag of frozen peas with pearled onions OR 1/2 bag of frozen peas OR 1/2 bag of spinach
  • optional: green onion, garlic or mushrooms (very small amount)

*Tam’s Favorite Tuna Casserole that dad makes!  (can substitute with chicken or turkey, if desired.)

Need: large and medium mixing bowl, 2-round casserole dishes or 1-rectangle casserole pan.

1. Grate cheese and place in medium mixing bowl.

2. Cook noodles a few minutes less than package instructs so it is a tad undercooked.  (Don’t forget a tad of olive oil when cooking noodles!)

3. In large mixing bowl, add 2 eggs.

4. Add tuna (or meat choice), vegetable, 8 oz. sour cream, 8 oz. cottage cheese.  MIX.

5. Add noodles.

6. Add cheese from medium bowl to large bowl but leave some in medium bowl to top off casserole at the end.  MIX.

7. Put in 2-round casserole dishes or 1-rectangle casserole pan. (Don’t forget to spray with Pam first!)

8. Preheat oven to 350 degrees.

9. Cook about 20-30 minutes but 1/2 half through…pull out of oven and place last cheese topping.  Finish cooking.

10. It should be lightly browned & cheese melted.  Cool 10 minutes.  Top with sour cream.

*The next day leftovers are amazing!
